SpamellaB has created another great way for you to indulge innocently. It’s also a great way to use our dried Montmorency cherries!

Serves: Makes 6 bars.

Ingredients:

100g Rolled oats
100g Dates, soaked in hot water for 10 minutes
100g Almonds
4 tbsp Pumpkin seeds
4 tbsp Cacao nibs
6 tbsp Active Edge CherryActive dried Montmorency cherries
4 tbsp Desiccated coconut
75g Dark chocolate
2 tbsp Coconut oil
1 tbsp Maple syrup

Method:

  1. Place the oats, drained dates and almonds into a food processor or blender and whizz up until broken down and you have a slightly sticky mixture.
  2. Stir in the pumpkin seeds, cacao nibs, dried cherries and coconut.
  3. Gently melt the chocolate, coconut oil and maple syrup then pour into the dry ingredients and mix to combine.
  4. Press into a small lined tin or tub and use your hands to spread out evenly. Chill in the fridge for at least 1 hour.
  5. When ready to serve pop out of the tin/tub and onto a chopping board. Cut into 6 bars and enjoy.
