These fantastic seed bites from SpamellaB would make a fantastic addition to any picnic this summer. Failing that they are perfect as a healthy nutritious snack.

Serves: 12
Prep time: 15 minutes
Cooking time: 0 but 2 hours chilling time

Ingredients:

50g Puffed brown rice
100g Rolled oats
25g Chopped dates
25g Active Edge CherryActive dried Montmorency cherries
3 tbsp Chia seeds
3 tbsp Cocoa powder
3 tbsp Cacao nibs
3 tbsp Pumpkin seeds
1 tsp Cinnamon
2 tbsp Coconut oil
3 tbsp Cashew or almond butter
4 tbsp Date syrup

Method:

  1. Mix together the puffed rice, oats, chia seeds, dates, dried cherries, seeds, cocoa powder, cacao nibs and cinnamon in a bowl.
  2. Gently melt the coconut oil, cashew/almond butter and date nectar then pour into the dry ingredients and mix well to combine.
  3. Tip this mixture into a lined 9x9inch tin lined with grease-proof paper and press down evenly.
  4. Place in the fridge for at least 2 hours to set.
  5. When ready to serve, lift out of the tin/tub onto a chopping board and cut into about 12 pieces. Enjoy!

(These bites can be kept in the fridge in an airtight container for up to 1 week. When taking out on a picnic, place in a tupperware box and keep chilled).
