Layered BlueberryActive® Blueberry & Vanilla Raw Cheesecake

Here’s another amazing recipe from health food blogger SpamellaB. Her blog and social media are an excellent source for all kinds of healthy ideas and we recommend you check them out for yourself.

Ingredients:

For the base –

  • 1 cup walnuts (or a mixture of nuts like brazils, hazelnuts, almonds)
  • ¾ cup dates
  • 3 tablespoons melted coconut oil
  • 2 tablespoons unsweetened desiccated coconut
  • 1 teaspoon vanilla extract

For the vanilla filling –

  • 1 x can coconut milk, kept in the fridge for at least 24 hours
  • 1 cup cashew nuts, soaked in water for at least 4 hours
  • 4 tablespoons maple syrup
  • 1 teaspoon vanilla extract

For the blueberry topping –

 

  1. First make the base: Pulse the nuts in a food processor or high-power blender until you have a fine consistency. Add the other ingredients and blend well so it all comes together. You want a slightly sticky mixture. Scrape out and press into a small loose-bottomed cake tin. Place in the fridge while you make the next layers.
  2. Next, open the can of coconut milk and scrape out the solid cream and place in a blender. Drain the cashew nuts and add, along with the vanilla and maple syrup. Whizz up until completely thick and smooth.
  3. Pour half of this mixture over the base and spread out evenly. Freeze for at least 2 hours, while keeping the rest of the blended mixture in the fridge.
  4. Finally make the blueberry topping: place the remaining mixture back in the blender along with the fresh or frozen blueberries and the concentrate. Blend again until purple and smooth then stir in the dried blueberries.
  5. Spread this over the vanilla mixture then return to the freezer for at least 2 hours.
  6. When you’re ready to serve, remove from the freezer at least 10 minutes beforehand, press out from the tin and slice up – now enjoy!
