Just in time for Christmas these fantastic festive bites by SpamellaB make the perfect healthy snack in-between Turkey leftovers.

Serves: Makes 8-10 squares

Ingredients:

For the base: –

100g Almonds
75g Dates, soaked in hot water for 30 minutes
25g Active Edge CherryActive dried Montmorency cherries
100g Oats
3 tbsp Cacao powder
1 tsp Cinnamon

For the topping: –

100g Oat flour
100g Dates, soaked in hot water for 30 minutes
3 tbsp Nut butter of choice (almond works well)
3 tbsp Almond milk
2 tbsp Maple syrup
2 tsp Mixed spice

To decorate (a mixture of dried fruit, nuts and seeds): –

CherryActive dried Montmorency cherries
Dried cranberries
Pumpkin seeds
Pecan pieces

Method:

  1. First make the base: Drain the dates and add everything to a food processor and whizz up until broken down and the mixture comes together.
  2. Press into a lined tupperware box or small tin and use your hands to spread out evenly in a generous layer. Chill in the fridge.
  3. Meanwhile clean out the food processor then drain the dates and add everything to it. Blend well until quite thick and smooth.
  4. Spread this over the base to cover then sprinkle over the dried fruit, nuts and seeds in a single layer. Gently press down. Chill in the fridge for at least 6 hours to firm up.
  5. When ready to serve, lift out and place on a chopping board. Use a sharp knife to cut into small pieces then spray with edible glitter (optional) and enjoy!
