SpamellaB has excelled herself with this recipe! These lasted less then a minute when we brought some into the office! We recommend you checkout her blog and social media for some excellent ways to indulge innocently.

Serves: Makes 8 bites

Ingredients:

For the base: –

50g Coconut flour
50g Oat flour
3 tbsp Cocoa or cacao powder
3 tbsp Honey or maple syrup
100ml Almond or coconut milk
2 tbsp CherryActive® concentrate

For the ice cream part: –

3 Frozen bananas
100g Coconut yogurt
3 tbsp Honey or maple syrup
1 tsp Vanilla extract

Extras: –

50g CherryActive® dark chocolate-coated cherries, chopped
50g Fresh cherries, stoned and sliced

To decorate: –

50g Dark chocolate, broken into pieces
1 tsp Coconut oil
Extra whole cherries

Method:

  1. First make the base: Simply mix together all of the ingredients together to form a dough (add more liquid if necessary) then press into a lined loaf tin or tupperware box and cover the base evenly. Set aside.
  2. Place the ice cream ingredients into a blender and whizz up for a good few minutes until thick and smooth. Pour this over the base
  3. Sprinkle the chocolate-coated cherries and fresh cherries over the ice cream then place in the freezer for at least 4 hours.
  4. When ready to serve, remove from the freezer 5 minutes beforehand then transfer to a chopping board.
  5. Meanwhile gently melt the chocolate and coconut oil. Slice up into squares/bites then drizzle each with some chocolate and top with a cherry. Enjoy!
  6. Keep any remaining bites in the freezer for up to 1 month.
