This is another quick and easy recipe that was sent to us by Triathlete Jemima Cooper. She loves our dried Montmorency cherries and this is one of here favourite things to bake with them.

Serves: Makes 12 muffins

Ingredients:

200g Self raising flour (Gluten free if needed)
60g Desiccated coconut
1 tsp Baking powder
50g Caster sugar
250g Active Edge CherryActive dried Montmorency cherries
200ml Fat free Greek yoghurt
80ml Coconut oil
1 Egg (beaten)
2 tsp Vanilla extract

Method:

  1. Preheat oven to 180C.
  2. Mix flour, coconut, baking powder, cherries and sugar in bowl.
  3. Mix egg, yogurt, oil and vanilla in small bowl.
  4. Add yoghurt mixture to flour and mix gently.
  5. Pour equally into 12 muffin cases and cook for 25 minutes until golden .
