Chocolate, Dried Tart Cherry & Coconut Bars

SpamellaB has created another great way for you to indulge innocently. It’s also a great way to use our dried Montmorency cherries!
Serves: Makes 6 bars.
Ingredients:
100g Rolled oats
100g Dates, soaked in hot water for 10 minutes
100g Almonds
4 tbsp Pumpkin seeds
4 tbsp Cacao nibs
6 tbsp Active Edge CherryActive dried Montmorency cherries
4 tbsp Desiccated coconut
75g Dark chocolate
2 tbsp Coconut oil
1 tbsp Maple syrup
Method:
- Place the oats, drained dates and almonds into a food processor or blender and whizz up until broken down and you have a slightly sticky mixture.
- Stir in the pumpkin seeds, cacao nibs, dried cherries and coconut.
- Gently melt the chocolate, coconut oil and maple syrup then pour into the dry ingredients and mix to combine.
- Press into a small lined tin or tub and use your hands to spread out evenly. Chill in the fridge for at least 1 hour.
- When ready to serve pop out of the tin/tub and onto a chopping board. Cut into 6 bars and enjoy.
