Health food blogger SpamellaB has created this fantastic recipe to help you indulge innocently. This chia bowl is a great way of getting your greens in to help alkalise the body. Her blog and social media are an excellent source of ways to indulge healthily, we recommend you pay them a visit.

This recipe is a great way to get our BlueberryActive® into a nutritious treat!

Serves: Makes 2 portions

Ingredients

For the chia pudding: –

200ml Coconut water
200ml Coconut milk
4-5 tbsp Chia seeds
1 tsp Spirulina, wheatgrass or matcha powder
1-2 tbsp Maple syrup, to sweeten
½ tsp Vanilla extract

For the nice cream: –

2 Bananas, peeled, chopped and frozen
50g Frozen blueberries
1 tablespoon BlueberryActive® concentrate
½ teaspoon Vanilla extract

For the toppings: –

2 Kiwi fruit, peeled and sliced
Blueberries, to decorate
Coconut chips, to decorate

Method

  1. First make the chia pudding: Mix all of the ingredients together in a bowl and whisk well. Leave to set in the fridge for at least 30 minutes – it will thicken considerably.
  2. Grab two single-sized kilner jar and arrange some kiwi slices around the edge. Now divide the chia pudding between them: spoon into the middle, it should reach the top of the kiwi slices.
  3. Remove the frozen bananas and blueberries from the freezer 10 minutes beforehand to soften slightly and place in a food processor or blender. Pour in the blueberry concentrate and vanilla then whizz up for at least 1 minute until smooth and thick.
  4. Spoon this on top of each chia pudding to reach the top. Decorate with extra kiwi slices, blueberries and coconut – now enjoy straight away!
